Comb Tooth mushrooms (Hericium coralloides) are related to the popular Lion’s Mane but grow in a distinctly different form. Instead of shaggy balls, they produce branching clusters covered with delicate, icicle-like spines that resemble coral or snow-covered branches.
The flavor is mild, slightly sweet, and often compared to seafood like crab or lobster, with a wonderfully tender texture. They’re excellent in soups, stir-fries, or simply sautéed in butter.
