Chestnut mushrooms (Pholiota adiposa) are a cluster-forming gourmet species prized for their amber-brown caps topped with fine golden scales. Their appearance is unlike most store-bought varieties, giving them a rustic, woodland look right out of a fairytale forest.
In the kitchen, Chestnuts shine with a nutty, earthy, and slightly peppery flavor that intensifies when cooked. Their firm texture holds up beautifully in sautés, risottos, and stews, making them an excellent alternative to standard button mushrooms.
They also tend to fruit in generous flushes, rewarding growers with bountiful harvests.
Spore germination – begins at week 0.
Mycelium colonization – develops over 2–3 weeks.
